Ingredients
- 3 tablespoons finely ground Cuban-style espresso coffee (brands like Café Bustelo or Pilon)
- 3–4 tablespoons granulated sugar (adjust to taste)
- ½ cup water (for moka pot or espresso maker)
- Optional for serving:
- Demitasse cups
- A dash of evaporated milk (to make Cortadito)

Brew the Espresso
Use a moka pot (stovetop espresso maker) or espresso machine.
Fill the bottom chamber with water (up to the valve) and the filter basket with finely ground coffee — don’t tamp it down.
Assemble the pot and brew over medium heat until the first few drops of coffee start to emerge.

Make the Espumita (Sweet Foam)
As soon as the first tablespoon of espresso comes out, pour it into a small cup or bowl with the sugar.
Using a spoon, vigorously beat the sugar and coffee together until it becomes a thick, light-brown paste (about 1 minute). This step creates the signature foam!

Combine
Once all the espresso is brewed, pour it slowly over the sugar paste, stirring gently.
The espumita will rise to the top naturally, forming a beautiful golden crema.

Pour into small demitasse cups.

- Cortadito: Add a splash of steamed milk or evaporated milk for a creamier version.
