This is the recipe I make when I’ve been on a vacation or right after the holidays when my body is screaming for a vegetable but I’m still craving something comforting. This is the ultimate side dish when a salad just won’t do.
My dad made this for my brother and I when my brother was just starting his foray into cooked foods (you know, after the trials that start when babies are 6 months old to introduce them to the basic building blocks of food). My brother was obsessed with cauliflower from the start, so this was the natural next step.
While it was baking, my dad described it as “tasting like popcorn” which of course rewarded him an unbelieving eyeroll from me. When I tried the cauliflower about 20 minutes later, I took the eyeroll back immediately.
These lightly charred, garlicky, crispy cauliflower bites are honestly good enough to eat while watching a movie. The fact that the recipe is so simple is another huge plus. This is the perfect side to any main dish, and you might just finish the whole tray before you get the chance to share it!
