
Breakfast and I have a complicated relationship. I’ve never been someone who was happy to skip breakfast and wait until lunch to eat, but I have also never been one to turn on the stove or put any kind of effort into food before 11am. That’s where this baked oats recipe comes into play. I make it the night before with simple ingredients, heat it up in the microwave in the morning, and voila! Oatmeal that tastes like cake for breakfast, ready in 1 minute.
You may have seen recipes for baked oatmeal that use whole oats, which is traditional and absolutely delicious. I prefer to blend my oats for a more cake-like experience. But, if you’re not into cake for breakfast, don’t worry! Whole oats work perfectly here as well.
This recipe is for 2 variations of baked oatmeal, but the options are literally endless. Craving birthday cake with sprinkles? Make the vanilla base and add preferred sprinkles to your heart’s content. Banana pancakes? Add mashed banana in the beginning and some cinnamon to finish it off! This is the kind of recipe you can make your own. It’s perfect for meal prep and keeps well in the fridge for up to 5 days.
Vanilla Berry Baked Oats Recipe

Ingredients
- ½ cup rolled oats, blended into flour
- ¼ tsp baking powder
- Pinch of salt
- 1 tbsp sweetener (maple syrup, honey, or sugar)
- 2 tbsp milk of choice
- 1 egg
- 1 tbsp yogurt or applesauce (for moisture)
- ½ tsp vanilla extract
- 2–3 tbsp berries (fresh or frozen)

Steps

Heat oven to 180°C / 350°F.

Mix oat flour, baking powder, and salt in a bowl.

Stir in milk, sweetener, yogurt/applesauce, and vanilla.

Fold in berries.

Pour into a greased ramekin. Bake 18–22 minutes, until just set in the center.
Optional toppings: vanilla yogurt, powdered sugar, or almond butter.

- 1–2 tbsp sweetener (to taste)
- 2 tbsp milk of choice
- 1 egg
- 1 tbsp oil or melted butter

- 1–2 tbsp chocolate chips (optional)

Steps
