Ingredients
For the panela simple syrup (makes enough for several lattes)
- 1 lb panela
- 2 cups water
For the latte
- 2 shots of espresso (adjust for preference)
- ½–1 cup milk of choice (I used oat, but use your favorite)
- 1–2 tbsp panela syrup, or to taste
- Ice

Make the panela simple syrup
- Combine panela and water in a small saucepan.
- Heat over medium, stirring occasionally, until the panela fully dissolves.
- Simmer 1–2 minutes, then remove from heat.
- Let cool; store in a jar in the fridge for up to 2 weeks.

Brew the moka pot coffee
- Fill the bottom chamber of your moka pot with water up to the safety valve.
- Fill the filter basket with finely ground coffee (moka grind), level it off—don’t pack it.
- Assemble the moka pot and heat over medium.
- Once the coffee starts flowing and you hear the bubbling finish, remove from heat.

- Fill a glass with ice.
- Add 1–2 tbsp panela syrup (adjust to your sweetness preference).
- Pour in ½–1 cup cold milk, depending on how strong you want it.
- Slowly pour the hot moka coffee over the milk and ice.
