Ingredients

Salad

  • 4–5 cups mixed greens or arugula 
     
  • ¼ cup sliced almonds, lightly toasted 
     
  • ¼ cup dried cranberries

Lemon Tahini Dressing

  • 3 tbsp tahini 
     
  • 2 tbsp fresh lemon juice 
     
  • 1 tbsp olive oil 
     
  • 1 small garlic clove, finely grated 
     
  • 2–4 tbsp warm water (to thin) 
     
  • Salt, to taste

Steps

Make the dressing 
In a small bowl, whisk tahini, lemon juice, olive oil, and garlic. 
Slowly whisk in warm water until smooth and pourable. 
Season with salt.

Assemble the salad 
Add greens to a large bowl. 
Drizzle lightly with dressing and toss gently.

Top with toasted almonds and dried cranberries just before serving.
