The Best Burger with Chipotle Mayo (Spicy & Creamy!)

There’s no shortage of burger recipes on the internet, but most of them either overcomplicate the process or bury the important details under a pile of unnecessary ingredients. This one keeps the focus exactly where it should be: well-seasoned ground beef, solid technique, and a few high-impact toppings that actually earn their place. An 80/20 blend is ideal because it gives you enough fat to keep the patty juicy without turning it greasy, and it browns beautifully when you treat it with a hot pan and a light touch. A bit of onion, garlic, cumin, and chili powder rounds out the flavor without turning it into a meatloaf situation.

The real personality comes from the toppings. A quick chipotle mayo adds smoky heat and a creamy, slightly tangy layer that cuts through the richness of the beef. It’s the kind of sauce that makes the rest of the burger feel more intentional without demanding extra work. Candied jalapeños bring a sweet-spicy bite, avocado adds a cool contrast, and the cheese melts into everything in that satisfying way only a good burger can pull off. Put it all on a brioche bun and you’ve got the right balance of soft, rich bread and bold, savory filling.

Nothing here is hard to make, and most of the components can be prepped while the patties are cooking. It’s the type of burger that tastes like more effort than it actually requires, which is exactly what you want on a weeknight or when you’re cooking for people who appreciate a little upgrade without the theatrics. Below is the full breakdown so you can get each piece right and assemble a burger that hits every time.
