Ingredients
- Chorizo con Papas from recipe here
- 1.5 cups refried beans
- 4 bolillo rolls (or sandwich rolls)
- 1½ cups shredded lettuce
- ½ cup crumbled cotija cheese
- Homemade Mexican Crema
- ½ cup sour cream
- 2–3 tbsp milk or crema (to thin)
- Pinch of salt
- Optional: squeeze of lime

Slice bolillo rolls lengthwise (don’t cut all the way through). Optional: lightly toast in a pan or oven for extra texture.

Spread a layer of refried beans on the bottom half of the bread.
